I have Parnesse, the Subtle Brush in play and cast a spell which I then copy with Tempt with Mayhem. How many extra copies can I get (assuming me+ three other players)? What is the stack going to look like?

When Tempt with Mayhem resolves you will get up to 4 copies of unnamed spell. Then for each copy, let's assume all four of your opponents choose to accept the tempting offer, you get to offer the get the choice of an additional copy of the unnamed spell to an opponent. Assuming it's currently your turn and players are labled A, B, C, D with you as A and procedding in turn order the stack is as follows.
Bottom of stack
Unnamed spell you cast
Copy of Unnamed Spell controlled by B
Copy of Unnamed Spell controlled by C
Copy of Unnamed Spell controlled by D
Copy of Unnamed Spell controlled by A
Copy of Unnamed Spell controlled by A
Copy of Unnamed Spell controlled by A
Copy of Unnamed Spell controlled by A
Parnesse's ability granting a copy of Unnamed Spell to target opponent of your choice
Parnesse's ability granting a copy of Unnamed Spell to target opponent of your choice
Parnesse's ability granting a copy of Unnamed Spell to target opponent of your choice
Parnesse's ability granting a copy of Unnamed Spell to target opponent of your choice
Top of stack

As each ability of Parnesse resolves it will put a copy of the unnamed spell on the stack. If any of the unnamed spells target you or a permanent you control there will also be a number of Parnesse's trigger to counter those abilites. But as you didn't specify that I left it out.
