I control a Progenitor Mimic copying a temporary creature (eg. Mutavault) and then I copy the Mimic with Undercover Operative.
Would the undercover mimic enter with a shield counter?
When I get an upkeep trigger from the undercover mimic would the token have a shield counter?

Copying the Mutavault results in an unanimated Land. Copy effects don't copy animation effects like that. If you then use Operative to copy the Mimic (after paying to animate it), it will enter with a Shield counter. The new copy from Operative also won't be a creature but you still get the Shield counter.
No, the tokens the Operative creates won't have Shield counters since that is part of the copy effect of the Operative. Which it won't have when it is *just* a Mutavault so you are creating a normal Mutavault. With the Mimic's trigger which also won't do anything since it is a token.
