if the only nonland permanents I control are Ajani's Pridemate, Dollmaker's Shop // Porcelain Gallery, and Heliod, Sun-Crowned and only the Dollmaker's Shop door of the room is unlocked, what is my devotion to white?

These abilities, as well as which half of that permanent a characteristic is in, are part of that object's copiable values.
Only unlocked parts of the room contribute to mana cost, so if only Dollmaker's Shop is unlocked then it has a mana value of 2 and contributes one devotion (for a total of three alongside Pridemate and Heliod). If both halves are unlocked, then it will contribute three devotion (and have a mana value of 8).
