If I cast Ebondeath, Dracolich from my graveyard, Dredging Claw would not be able to attach to him since he technically went from the graveyard to the stack and THEN to the battlefield.
Is that correct?

That's correct for the stated reason, yes. There is an intermediate zone change here - graveyard to stack to (if Ebondeath resolves) battlefield.
