Here's how i would word Shield Knight:
At the beginning of your upkeep, create X 1/1 blue soldier creature tokens. Then if you control ten or more of those tokens, transform Zeltar, Shield Knight.
Also, Sword Knight needs to be nerfed. A 6/6 with Vigilance, Trample and First Strike is more resonable.
