So if an attacking creature with Double Strike and Trample kills its only blocker during the first combat damage step with 0 damage left over (for example it dealt 5 damage to a creature with 5 Toughness), how much damage gets "Trampled"?

Zero damage will be dealt to the defending player during the first strike damage step. During the normal damage step, zero toughness remains to block the attacking creature, so its full power will be dealt as damage (resulting in 5 damage in your example).
