Changing poll options clears votes
Currently, if you want to change the options in a poll, be it adding, removing, or just fixing typos or something, there doesn't seem to be any way to do so without completely clearing all existing votes, as far as I can tell.

Existing Mod options don't include editing, and I think it's going to be quite the rabbit hole modding myself.
