My thought that the majority of the world was just covered in shallow seas with a few sandbanks thrown in and just absolutely covered in vegetation, sort of like the Rootwater/Skyshroud of Rath before the overlay (those poor merfolk).

I see no issue with a plane-wide bayou. A bayou is a plausible thing. All that's required is for those same conditions to be relatively uniform throughout a world. Which is easier on plane than on a planet.
