Does a creature token count as a permanent that I can sacrifice to an ability of another creature I have?

Yes, a creature token is a permanent. Anything on the battlefield is a permanent. So as long as the creature you are sacrificing to doesn't say something like "sacrifice a nontoken permanent" or "sacrifice a nontoken creature", you are fine to treat it as any other creature.
