Who gets the dies trigger?

I use Thief of Sanity's ability to cast an opponent's Cavalier of Thorns. Cavalier dies later.

Do I get the dies trigger because I controlled it or does my opponent get the trigger because it went to their grave?

"You" in a permanent's ability means its controller, not its owner. You put the triggered ability on the stack, choose its target, and choose whether to exile the Cavalier.
