Luminous Broodmoth and Crewed Vehicles
If I have a Luminous Broodmoth and a crewed vehicle without flying, say a Dermotaxi , and the dermotaxi dies as a creature, will it come back as an uncrewed vehicle artifact with a flying counter on it?

Yes, that is exactly what will happen. Broodmoth looks for a creature to die and a creature died. So it brings that card back with a counter on it. It doesn't matter that it isn't a creature in the graveyard. In the case of Dermotaxi, you will need to exile a new card as it will not have access to the previous card exiled with it.

Yes Vat is essentially the same. A creature died and Vat can exile it. If you activate Vat you will get a noncreature Vehicle with Haste that you will need to sac at the beginning of the next end step.
