Hi. opponent has a jace, the mind sculptor on the field. I cast a vampire hexmage, then use hexmage ability to remove all counters from jace. Can the opponent path to exile my hexmage before it could sac itself to remove the counters from the planeswalker?

No, they cannot. Sacrificing the Hexmage is part of the cost so there is no way to get it with a Path to Exile. In your case, it is already gone and they can't even target it with Path. If you pass priority and they do cast Path targeting it, you can just sac it in response.
