Teferi is a canonical great dad even though he has to travel a lot for work.

King Kenrith of Eldraine is a pretty cool dad as well, very supportive of the planeswalking twins.

Yawgmoth and K'rriK are the best father/son in magic. Looking at their lore, they both built their own societies in isolated realities (Yawg in Phyrexia proper and K'rrik in the time bubble) and they've both got such a cunning focus on the endgame of the family business.

They're like evil model train enthusiasts with a thematic enjoyment for Tom Waits and death metal

Seshiro.

He was not only a father to Sachi and Sosuke, but also to his Orochi people.

When he was born, his mother brought him to Dosan, where he studied with the monks and learned harmony. When he returned home, he stirred his people to action against the kami, became the "broodmaster" (leader) of the Orochi, and began a legacy of harmony and wisdom that elevated his tribe for generations. To this day, he is remembered as the father of what the Orochi have grown to become.

I always felt Ajani, Mentor of Heroes felt like a super pappy card. I don't know anything about the story ajani much but it always struck me as paternal.

Kondo. Raising both Gerard and Vuel/Volrath to make one of the best antagonist/protagonist combos in magic lore is good stuff, especially raising Gerard as one of his own.

Ulamog. When talking about shear number of children, its hard to beat Ulamog on quantity. You have to tip your hat to anybody willing to have more than three children.

Honeslty Angrath is probably the best choice. I liked his backstory a lot.
