Hi, it's my turn. Attack with an adorned pouncer, opponent blocks with a 1/1 goblin token.

First combat damage step, the goblin is dead. Could the pouncer deal 1 damage to the opponent on the second combat damage step? Or does it need to be given trample to do that?

If a creature has been blocked it will remain blocked until the end of the current combat step. The only way it will be able to damage the defending player/planeswalker is if it has trample. So in your situation the aodrned pouncer will destroy the goblin token in the first strike damage step and then as there is nothing in combat with it, it will not do any damage in the normal combat damage step.
