Spells kite and Deflecting Palm

If I have a creature and a spellskite, then I attack with the creature. If my opponent uses deflecting palm, can I redirect the damage deflecting palm is doing to me to the spellskite? Or is it still part of the "deflecting palm doesn't target" rule?

Spellskite can change the targets of spells and Deflecting Palm never uses the word "target" - which is what the rules consider to be, well, a target of an object on the stack. So no, you cannot change your opponent's choice.
