Hi, for example it's the opponent's turn they cast ensnaring bridge. I have a calcite snapper and a flooded strand in play. In response to the casting of bridge, can I sac the flooded strand, get a land so that snapper has 4 power, then cast stubborn denial to counter the bridge?

Yes, that works. Objects on the stack resolve one at a time and anything added to the stack is added on top. Which means it will resolve before anything already on the stack. So, in this case, you start with Bridge on the stack and then crack the fetch. This puts the fetch ability on top so it will resolve first and you get a land.
Then, the Snapper triggers and that trigger is on top so, when it resolves, Snapper becomes a 4/1. Then, after that resolves, you can cast Stubborn Denial. When that resolves it will see you control a creature with a power of 4 and will not offer the opponent the ability to pay {1} to ignore Denial.
